Cut chicken into 1-inch pieces. Combine flour, salt, and pepper. Pour flour mixture into a plastic bag. Dip chicken in eggs, then into the bag of flour. Shake the bag to coat chicken pieces. Heat ½ inch of oil in a large frying pan. Cook chicken 5-7 minutes, turning once, until brown and chicken is cooked completely. Meanwhile, mix all glaze ingredients in a small pan and heat the glaze on medium-low heat. When the chicken is cooked, drain chicken on paper towels. Dip chicken pieces in the glaze and place on a broiler pan or a baking rack resting in a 9 x 13 pan. Bake in the oven at 250° for 15-20 minutes. Serve warm or cool. Good with white rice.
