    Banana Bread

    1. Mix all ingredients. Let the mixture sit for 1 hour in the mixing bowl at room temperature. ( I put it in the fridge, covered, for an hour)

      Pour into greased loaf pan(s). Bake 60-65* minutes at 350 degrees. If using a bundt pan, bake for 50-60* minutes at 300 degrees. Ten minutes before the final cooking time, check doneness with a toothpick. When the toothpick comes out clean from the middle of the loaf, it is done, or when the center of the loaf is close to 195-200 degrees F.

      Let stand until almost cool. Loosen bread from the sides with a knife and set aside. 

    Note

    Due to the size of the mixture it may not all fit into one loaf pan; do not overfill your pan. Use 2 loaf pans for the extra batter.

    I use 3 loaf pans. I fill my loaf pans about halfway so they don't spill out while baking.

    It's okay to let the crust get very dark if cooked longer, it is supposed to be, and won't hinder the taste
