Cut the chicken into small pieces. Combine cornstarch, beef broth, soy sauce, and ginger. Mix well, then combine the sauce and chicken in a large skillet. Cook coated chicken for 3-4 minutes, or until the sauce thickens considerably and the chicken is cooked. Add broccoli, water, and soup mix and bring to a boil. Reduce the heat and cover. Simmer for about 8-10 minutes or until broccoli is tender and most water is absorbed. Add cashews immediately before serving. Serve over hot white rice.
