    1. Heat oven to 375°F. Combine shortening, brown sugar, egg, milk, and vanilla in a large mixing bowl. Beat at medium speed until well blended. Combine oats, flour, baking soda, salt, and cinnamon. Gradually add to the creamed mixture and beat on low speed just until blended. If desired, add almonds, coconut, and chocolate chips. Drop rounded tablespoonfuls of dough 2 inches apart onto the baking sheet. Bake for 10-12 minutes, or until lightly browned. Cool for 2 minutes on a baking sheet, then remove to a wire rack to completely cool. Makes 2 ½ dozen cookies.
