In a bread machine pan, place the first 8 ingredients in the order listed. Select the dough setting. When the cycle is complete, turn the dough onto a lightly floured surface. Punch down; cover and let rest for 10 minutes. Divide into 24 pieces; shape each into a ball, and place in a 9x13 greased baking dish. Cover and let rise in a warm place until doubled, about 35-40 minutes. Brush tops with remaining egg white. Bake at 350° for 18-20 minutes.With a Stand Mixer: A bread hook is excellent for kneading. You'll want to knead for longer than you might think. For this recipe, once all ingredients are combined, knead on medium-low speed for 8-10 minutes. The dough should become smooth, elastic, and pull away from the sides of the bowl.
