Preheat oven to 375°F. Crush chips into crumbs. Add paprika and lemon pepper to the chip crumbs. Dip the chicken breast into the melted butter, then roll in the crumbs to coat. Place the coated chicken into a greased 2-quart baking dish. Sprinkle the remaining crumbs over the chicken. Bake for 25-30 minutes. Serve with white rice and salsa.
